Nut-kernel Zhang (果仁张 guorenzhang)

With a history of more than 160 years, Nut-kernel Zhang is famous for its peanuts, walnut kernels, melon seeds, apricots, and pine nuts with sweet, sour, and spicy flavors. The process of making these nuts obeys strict rules in terms of the color the nuts should achieve, coking temperature and time according to different seasons.

Ear-hole-like fried rice cakes (耳朵眼炸糕 erduoyanzhagao)

Boasting a history of more than 100 years, erduoyanzhagao is made of rice flour. It has small red beans and white granulated sugar as its stuffing. It is then deep fried in sesame oil. Liu Wanchun was its creator. The "zha gao" (rice cake) he made was named after the hutong he lived in at the time called Erduoyan.
